comfort food, vegan style

even vegans have fat days and this is one of my favorite comfort meals. a blt and potato salad. yum, right!?!

first, my fblta, a fakin' bacon lettuce tomato and avocado... i love smart bacon by lightlife cooked up in a dry skillet until super crispy. toast some fresh sourdough and smear on a thin layer of veganaise, then pile up baby greens, ripe tomatoes, and avocado slices. you could stop there ooooor you could make potato salad.

my potato salad is super easy. i cut up red potatoes and boil them in salted water until the perfect potato salad texture. while they cook, i chop up organic celery and red bell peppers. i like to chop them very, very fine. then i mix the drained potatoes with the veggies and a tablespoon or so of veganaise. i don't like my potato salad super mayonaise-y so i just add enough to coat the potatoes and bam, done. i like to eat it warm, but it just gets better the longer it sits!!!

finish off with a dill pickle and voila, perfect vegan comfort meal. is anyone else hungry!?!?!?
