So this is possibly my favorite thing to eat on the planet. I could seriously eat this everyday... I have eaten this everyday... I’m not ashamed, it’s that good. It’s perfect for a potluck meal or whenever you are in need of some quick eats. This meal is ready in 20 minutes and tastes delicious!!
Serves 2-3 as main dish / 4-5 as side dish
1 cup of quinoa
2.5 cups of veggie broth
1 seedless cucumber, chopped
2 cups cherry tomatoes, chopped
1/4 cup fresh lemon juice
2-3 garlic cloves, finely chopped
1/4 cup pitted kalamata olives, coarsely chopped
If you have a rice cooker, put veggie broth and quinoa in the cooker and press on. If you are using a pot, cook like rice. Add stock and quinoa and bring to a boil, reduce heat to low and cover. Cook for 20 minutes or until stock is evaporated.
While quinoa is cooking, chop all the veggies and put in a bowl. I like to put the garlic on top. When the quinoa is finished, add the super hot quinoa to the veggie bowl. The garlic on top will give off the most killer aroma. Add the lemon juice on top of the quinoa then mix well and serve!!! This also tastes delicious on top of a bed of kale!!!
