Bombdiggity Baked Tofu

I love tofu. I don't eat it a ton, but I am definitely a fan. I have tried baked tofu a few times and wasn't really obsessed... until now!!! This recipe is tangy, sweet, salty and friggin delish. The flavors are complex and satisfying. It tastes insane on it's own with some whole wheat couscous and steamed broccoli or in a sammie or veggie sushi. 

1 block of firm tofu (pressed* and cut into thin slices for sammies or thick slices for main course or sushi)
4 tablespoon high quality Tamari or Soy Sauce
2.5 tablespoon red miso paste
10 drops of liquid stevia
quarter of a lemon, juiced
1/4 teaspoon garlic powder

*Pressing the tofu is super important, wrap it in a few paper towels and then a kitchen towel, then sit something heavy on it for 5-10 minutes. Okay, who are we kidding. Try to make it 5 minutes*
Pre-heat the oven to 425. Cook for 15 minutes, flip coat with more marinade and bake for 10 more minutes, if you cut it thicker then bake for an additional 10 minutes. YUM!!!!
