Roasted Red Pepper & Pesto Sammies

Holy yummy Batman!!! This sammich completes me. It takes steps... Yes. I know. Very Un-Chic & Skinny like... But it’s so delicious that is worth it and even with the multiple steps it takes like less than 30 minutes. And it's got Arugula and Walnut pesto!!!! Winning!!

Sandwich Components
sourdough bread
roasted red peppers, packed in water with no added sugar, 1 per sandwich
artichoke hearts, packed in water, 1 per sandwich
Arugula and Walnut Pesto [recipe below]
3-4 slices of Bombiggity Baked Tofu [recipe here]
Arugula and Walnut Pesto
2 cups arugula 
1-2 garlic cloves, minced
3 tablespoon of walnuts
3 tablespoon of veggie stock
2 tablespoon of nutritional yeast 
quarter of a lemon, juiced
teaspoon of salt 

I lived off of the sandwich for like 3 weeks. 3 happy, happy weeks.
