CousCous: the food so nice they named it twice

i love couscous. i mean, who doesn’t? really, you don’t?? get off my blog... sorry, couscous fires me up. this meal is easy, quick, full of nutrients, and virtually fat free. i love trader joe’s harvest grain blend, it’s got israeli couscous, orzo, red quinoa, garbanzo beans, and it tastes like heaven. this is so good i’m going to make it for dinner tonight. TONIGHT, i say. 
Serves 2
1 15oz can of fire roasted tomatoes
1 15ox can of white beans, rinsed and drained
2 cups of chopped kale
2 cloves of garlic
veggie stock
1/2 a package of  Trader Joe’s harvest grain mix

cook the grain mix with veggie stock per package instructions. whilst that’s simmering away, saute garlic with a splash of veggie stock. once it’s fragrant add the white beans and heat through. before you add tomatoes strain half of the liquid, then toss with beans and garlic. add kale, a hefty pinch of both salt and pepper. then add your cous cous mixture. so easy and so comforting and hearty. 
quick add-on: garlic ume broccolini 
1 bundle of broccolini
2 large cloves of garlic, minced
1 tablespoon of ume vinegar
veggie stock

heat garlic in a splash of veggie stock. add the broccolini and another splash of veggie stock. cover with a lid and let simmer until bright green, but tender. finish with the ume vinegar. enjoy!!!!
